Daulat ki chaat is Old Delhi's winter-morning sweet: milk foam set under the night dew, sold from trays in the lanes around Kinari Bazaar in Chandni Chowk. It appears roughly from November to February, most reliably December to February, and the trays are often empty by mid-morning. Finding it is easy once you know them.

  • Season: winter only. December to February is the reliable window; some carts start in November.
  • Time: mornings. The milk stands out overnight, is churned into foam in the morning and starts to sink as the day warms, so trays often sell out by mid-morning.
  • Place: carts in the lanes around Kinari Bazaar in Chandni Chowk. Look for a flat tray of pale foam with a saffron-yellow top and a dusting of pistachio.

It is a sweet for eating on the spot, standing at the cart. It will not survive the trip back to the hotel.

    Building a winter morning around it

    Daulat ki chaat is light, so it works as the first stop of a longer breakfast in the old city rather than as breakfast itself. Take the Yellow Line metro to Chandni Chowk, find the carts early, then walk on: Kinari Bazaar is also where khurchan, the sweet made from layers of milk skin, is sold, and the morning trades of Chandni Chowk, from nagori halwa to hot jalebi, are a few lanes away.

    Two cautions. Many Old Delhi shops close on Sunday, and some shut through the day during Ramzan, the month of fasting.
