Chole bhature in Delhi

Chole bhature reached Delhi in the 1940s with migrants from Lahore after Partition, and a cart one of them started in Paharganj is still the address many Delhiites name first. It is a morning plate and a heavy one: two puffed fried breads and a bowl of spiced chickpeas, eaten before noon and followed, as often as not, by no lunch at all.

Where to eat it in Delhi

All three places are vegetarian and from the India GO guide. Only the first serves bhature; the other two are Old Delhi's ways of eating the same chickpeas with other breads.

Sita Ram Diwan Chand, Paharganj

The counter many Delhiites call the city's best for chole bhature, serving since 1950, including a famous paneer-stuffed bhatura. Everything is fried fresh to a constant queue, and the operation now has a couple of tidy branches. Come for breakfast or an early lunch.

Kake Di Hatti, Fatehpuri, Chandni Chowk

Since 1942, a busy sit-down room where the chole come with enormous stuffed tandoori naans the size of a steering wheel, alongside buttery paneer gravies. Portions are huge, so share.

Lotan Chole Kulche, Chawri Bazar

A morning institution since 1920 that does one thing: zesty, secret-spiced chole with green chilli and soft, oven-baked kulche. When the day's batch sells out, that is it until tomorrow.

Why it is a Delhi dish

Where chole bhature was born is argued over, with several writers placing it in pre-Partition Punjab. Who brought it to Delhi is also disputed. One claim goes to a Lahore restaurateur who opened a restaurant in Connaught Place after Partition in 1947; another, widely held, to Sita Ram, also from Lahore, who began selling it from a cart in Paharganj with his son Diwan Chand, and that cart grew into Sita Ram Diwan Chand. Go early, go hungry

Several of these are morning operations, and some sell out, so go before noon. A bhatura is served hot and deflates as it cools: eat it at the counter, and tear it rather than cut it.
