A small counter by Chawri Bazar metro, going for the best part of a century. Aloo tikki and papdi chaat are assembled to order with fresh chutneys. Go at peak hours, when turnover is highest.
Old Delhi: Natraj Dahi Bhalle Wala
At the mouth of Paranthe Wali Gali in Chandni Chowk, running since around 1940. Famous for dahi bhalla (lentil dumplings in whisked yogurt), and it also fries a crisp aloo tikki chaat.
India Gate: Prabhu Chaat Bhandar
A chaat cart of about fifty years on Shahjahan Road near the UPSC building, a short walk from India Gate. Papdi chaat and golden aloo tikki are the two orders, assembled fresh with chutneys and cool yogurt.
Tansen Marg: Nathu's Sweets and Triveni Terrace Cafe
Two places with a table. Nathu's Sweets in Bengali Market, open since 1936, makes chaat and tikki fresh in a dining hall beside its sweet counter. A short way along Tansen Marg at Mandi House, Triveni Terrace Cafe sits on an open-air terrace inside the Triveni Kala Sangam arts centre, with a simple, cheap menu of aloo tikki, palak patta chaat (fried spinach-leaf chaat), pakoras and filter coffee.
Tikki or tikki chaat
The order decides the plate. A plain tikki comes whole, with tamarind chutney, green coriander-mint chutney and saunth, a sweet-sour sauce. Tikki chaat is the same patty broken open and buried under whisked yogurt, chutneys and a shake of spice. Many people order it alongside papdi chaat or dahi bhalla.
