Brahmin's Coffee Bar, Basavanagudi

An old Basavanagudi tiffin room, open since 1965, with a one-page menu: idli, vada, kharabath, kesari bath and filter coffee. There is no dosa, and the founding family still keeps an eye on the counter. Mornings are crowded. Cash only.

Airlines Hotel, Lavelle Road

One of the city's original drive-in cafés: an open-air garden in central Bangalore, shaded by enormous rain trees, where steel tumblers go round from dawn. The classic order is benne masala dosa with coffee, and unlike most old coffee counters it is a place to sit and stay.

Koshy's, St Mark's Road

Over seventy years on St Mark's Road: high ceilings, old fans, red-brick walls and an all-day menu. People come for filter coffee and the old-Bangalore room as much as for the food. Unlike the darshinis, it also serves meat and beer.

Book and art cafés

For a long sit with a laptop: Atta Galatta in Indiranagar, half bookshop and half café, with filter coffee and its jaggery cake; and Dyu Art Cafe, a bungalow café-gallery down a quiet Koramangala lane. Go to Dyu on a weekday, as weekends bring queues.

A darshini tumbler or a café hour

The two ways of drinking it in Bangalore feel different. At a darshini (a self-service counter where people eat standing) the coffee is quick and cheap, comes in a tumbler (a tall steel cup) standing in a davara (a wide steel bowl), and is drunk standing, between idli and the next errand. At Airlines Hotel, Koshy's or a book café it becomes something to sit over.

Tumbler and davara

Pour the coffee back and forth between the tumbler and the davara until it cools and froths, then drink from the tumbler; the davara is only for cooling.
