The Bangalore version

One name covers two dishes. The original benne dose of Davanagere, in central Karnataka, is small and soft, with butter worked into the batter itself; the full story is on the benne masala dosa page. Several variants are popular in Bangalore. At CTR, the best known of its tiffin rooms (small vegetarian eateries for South Indian breakfast), the dosa is thick yet crisp, gold with butter, with spiced potato inside.

So if a plate arrives crisp and golden rather than soft and pale, nothing is wrong: that is how these Bangalore addresses make it.

Three addresses, three moods

The dosa is similar at all three; the experience is not.

Central Tiffin Room (CTR), Malleshwaram

Officially Shri Sagar, on Margosa Road since the 1920s, and repeatedly ranked among the city's top butter dosas by local food critics. Thick yet crisp, gold with butter, eaten at marble-topped tables under ceiling fans. Price level ₹.

Airlines Hotel, Lavelle Road

One of the city's first drive-in cafés: an open-air garden under huge rain trees, right in central Bangalore. Benne masala dosa is the classic order here, with filter coffee, and this is the one place of the three where you are expected to linger. Price level ₹₹.

Bengaluru Cafe, Jayanagar

A small counter in 2nd Block, opened by an engineer. The crust is crisp enough to hear, with a buttery layer underneath, and the chutney has its own fans. Quick service, spotless, and a much shorter queue than CTR. Price level ₹.

If you are near Gandhi Bazaar or Seshadripuram

Two other famous dosas often come up in the same conversation, and both are worth knowing about, though neither is a benne dosa in name. Vidyarthi Bhavan, a dosa hall in Gandhi Bazaar since 1943, serves a thick, crimson-crisp masala dosa laden with ghee; the queue down the lane is part of the visit. Umesh Refreshments in Kumara Park West is a standing-only counter for a ghee podi masala dosa, soft under a glossy slick of butter; no seats, cash only.
