Not the bonda you meet elsewhere

Across most of South India a bonda is spiced potato dipped in gram-flour batter and fried; Kerala adds tapioca, sweet potato and egg versions. The Mysore bonda skips the filling altogether. The batter is the whole point: soured with curd, seasoned with pepper and coconut, it rises in the oil and leaves a hollow inside, crisp outside and soft within. Its nearest relative is the coastal goli baje, also called Mangalore bajji, which is why menus in Karnataka use the names bonda and bajji loosely.

Where to look for it

No single address in Mysore owns this snack, and the India GO guide does not name one. Look in the city's tiffin rooms, the small places serving South Indian breakfast and snacks, in the afternoon rather than at breakfast, and ask what is coming out of the oil.
