Kadhi chawal

Also called: Kadhi chawal, Кадхи чавал, Kadhi, Кадхи

Sour yoghurt-and-gram-flour curry, thin and turmeric-yellow, poured over plain rice. Cheap, filling and gentle, which is why it is what pilgrims are fed along the walking routes.

How it's eaten

Mix it into the rice with your fingers before the first bite; it is meant to be soupy, not sauced.
