Kulfi falooda in Delhi
Delhi is usually called the birthplace of kulfi, and Old Delhi still splits this dessert between two old shops a short walk apart in Chandni Chowk. Kuremal Mohan Lal Kulfi Wale, in Kucha Pati Ram near Chawri Bazar since 1906, freezes kulfi inside whole fruit. Giani's Di Hatti at Fatehpuri, since 1956, pours thick rabri over crushed ice and faluda. Go in summer, and carry cash.

Two shops, one dessert
Neither shop is famous for the textbook bowl of kulfi on falooda. Between them, they cover both halves.

A dessert institution near Chawri Bazar since 1906, famous for kulfi frozen inside whole fruits, most of all a hollowed mango packed with saffron cream. The stuffed-fruit kulfis draw people from across the city. The fruit range is fullest in summer. Cash. Price level ₹.
Giani's Di Hatti, Fatehpuri
The original rabri-faluda house, going since 1956 near Fatehpuri: thick rabri (milk reduced with dry fruit) poured over crushed ice and faluda, less sweet and richer than most. The name now belongs to a chain of ice-cream shops across Delhi and Gurugram, including a counter at the Aerocity food court, but the Old Delhi original is the one to find. Price level ₹.
A cool walk through Chandni Chowk
Both shops are in the lanes of Chandni Chowk: Kuremal off Chawri Bazar, Giani's at the Fatehpuri end. A summer afternoon walk between the two gives you the frozen half and the falooda half of the dessert in one go. Chawri Bazar station on the Yellow Line is the natural start.

Kulfi, falooda and rabri
Kulfi is slow-cooked, thickened milk frozen without churning, so it is denser than ice cream and melts more slowly. Falooda is the cold, slippery part: thin vermicelli with rose syrup and sweet basil seeds. Rabri is milk reduced for a long time: at Giani's it goes over the faluda, and some shops pour it over kulfi too. The dish is vegetarian, with no egg, and not vegan.
