Palada payasam
Also called: Palada payasam, Палада паясам, Payasam, Basundi
Rice ribbons simmered in milk and sugar for hours until the whole pot turns pale pink from the caramelising milk. The dessert that closes a sadya, served onto the same banana leaf.
How it's eaten
At a sadya it comes at the end, poured onto the leaf; you drink it from the fold.
