Nolen Gur Sandesh

Sandesh made with nolen gur, the first date-palm sap of winter, boiled down to a smoky caramel. It exists for about three months a year, and Bengalis plan around it.

How it's eaten

Winter only, roughly December to February. Outside that window what you are handed is ordinary sandesh with caramel colour.

Where to try it

Kolkata

Winter only: nolen gur is date-palm sap tapped in the cold months, and the whole city's sweet shops change their menu around it.
