Indian food

Mandua roti

Also called: Mandua roti, Мандуа роти, Madua roti, Ragi roti

Dark, almost chocolate-brown flatbread of finger millet, heavy and faintly sweet. Grown on terraces too high for wheat, it is what the Garhwal hills actually ate before rice came up the road.

How it's eaten

Ask for ghee on it: mandua is dry by nature and the fat is part of the recipe.

Where to try it

Gangotri

Wheat stops growing at this altitude; finger millet does not. This is the bread the valley actually had.
