Indian food

Maggi

Instant noodles that India took over and made its own: boiled with onion, green chilli and whatever else the kitchen has, served in a steel bowl. In the Himalayan towns it is the standing order after a walk: hot, cheap and ready in two minutes.

How it's eaten

Eat it while it steams; it goes soft quickly. Chai alongside is the local pairing.

Where to try it

Gangotri

No apology for this one: at 3,000 metres, on a pilgrim road where the kitchens are two, a hot bowl of it is what there is, and everybody walking up eats it.
