Indian food

Kulhad milk

Also called: Kulhad milk, Молоко в кульхаре, Kulhad doodh, Hot foamy milk in clay kulhars

Buffalo milk boiled down for hours with saffron and crushed nuts, poured foaming into an unglazed clay cup that is thrown away after. The clay cools the milk and gives it a faint earthy smell that no glass version has.

How it's eaten

Drunk standing, hot, in one or two goes: it is a stop on the way to the ghats, not a sit-down.

Where to try it

Haridwar

Poured at dawn on Ram Ghat beside Har Ki Pauri and usually gone by evening. For many pilgrims the cup is part of the ritual, not a snack after it.
