Indian food
Kanji vada
Also called: Kanji vada, Канджи вада, Kanji bada, Канджи бада
Lentil fritters dropped into a cold, sour brine of black carrots and mustard seed that has been left to ferment in the sun. Tart, fizzy and bracing: a north Indian winter drink you can chew.
How it's eaten
Drink the brine first, then eat the soaked vada. Cold months only.
Where to try it
Haridwar
Winter only, and worth going out of your way for: few places outside the Doab still ferment the brine properly.
