Indian food

Ghewar

A honeycomb disc of batter fried in ghee so it sets porous, then soaked in syrup. It belongs to the monsoon: Rajasthan eats it at Teej and Raksha Bandhan and barely the rest of the year.

Where to try it

Jaipur

A monsoon sweet: made for Teej and Raksha Bandhan, and the honeycomb only sets right in humid air.
