Indian food

Dal Baati Churma

Rajasthan on one plate: hard wheat balls baked in embers, split and drowned in ghee, served with lentils and a sweet crumble of the same dough. Desert food: it was built to keep.

How it's eaten

Crush the baati into the dal with your hand, then alternate with the sweet churma. The contrast is the dish.

Where to try it

Jaipur

Baked in cow-dung embers traditionally, and the churma is crushed by hand at the table; this is a three-part dish, not a plate of bread.
