Indian food

Aloo ke gutke

Also called: Aloo ke gutke, Алу ке гутке, Aloo gutke

Vegan

Boiled potatoes tossed in mustard oil with jakhiya, a wild Himalayan seed that pops like mustard but tastes of nothing else. The dish that tells you the kitchen is Garhwali and not Punjabi.

How it's eaten

Eaten with mandua roti or on its own as a mid-morning plate.

Where to try it

Gangotri

The jakhiya seed is the giveaway: it grows here and nowhere in the plains, and a kitchen that uses it is cooking Garhwali, not generic North Indian.

Rishikesh

Garhwal starts here: jakhiya seed instead of cumin is the tell.
