Masala puri started in the Mysuru region and became a Bangalore street staple. What makes it local is the hot gravy: a pot of green peas with chilli, garam masala and chaat masala poured hot over crushed shells, with each bowl assembled to order. Began as a pani puri cart outside Seshadripuram College about fifteen years ago. Chowpatty-style, with a heavy hit of fresh jeera (cumin). Small, spotless and crowded, so nothing sits around.

Banaswadi, east: Shree Chat Point

In HRBR Layout, known for its "white pani", pani puri water made from green chillies instead of tamarind, an Andhra habit. The masala puri and sev puri are built to order at a well-run stall.

Richmond Town, late: Johnson Market

A 1929 market whose lanes wake up after dark. The late-night masala puri here is known for its tang. The charcoal grills next door are meat, so vegetarians should order at the chaat stall itself.
