Vegetarian restaurants in Ajmer
Ajmer is an easy city to eat vegetarian in, even though the shrine quarter around the Dargah is known for its Mughlai meat. The pure-veg places listed above cover a Rajasthani sit-down thali with Jain options, the city's famous kachori counters and its two sweets. Several mixed restaurants also run a proper vegetarian menu, one of them with a separate pure-veg dining room.
How to choose: four kinds of vegetarian meal
All the pure-veg places in the list are cheap (₹), except the thali restaurant (₹₹).
A Rajasthani thali at a table (₹₹)
Desi Chulha Rabri Wala in Vaishali Nagar is the sit-down choice: dal baati churma eaten on a khaat (string cot), cooked on a mud chulha (stove), with ker sangri, besan gatte, five-flour tikkad and shrikhand. Regional dishes that are hard to find outside Rajasthan, and Jain preparations on request.
Kachori and chaat for breakfast (₹)
Two old counters in Kesarganj. Khandelwal Chat Bhandar, about seventy years old, sets the standard for kadhi kachori, its besan kadhi made with hing and no onion or garlic, plus palak pakode and desi-ghee aloo tikki. Shankar Chaat is known for kachori and saakhe (ajwain crackers in kadhi), dahi vada and samosa chaat. Both fry to order.
Lassi by the Dargah (₹)
Anant Jain Lassi, in the lanes of the Dargah bazaar, serves thick lassi under malai (clotted cream), rabri and saffron in single-use clay kulhads.
Sohan halwa to take away (₹)
Moolchand Buddhamal Halwai in Purani Mandi (since 1870) and Aamir Sweet Corner at the Dargah's Buland Darwaza. The halwa is ghee, wheat, sugar and dry fruit, with no mawa or milk. More on Ajmer's sweets.
Mixed restaurants that feed vegetarians well
Mango Masala at India Motor Circle is split in two: a pure-veg side called Mango Curry and a non-veg Mango Masala side, with separate seating for vegetarians and an in-house bakery. The menu runs from North and South Indian to Chinese and thin-crust pizza, with a vegetarian version of nearly everything.
Honeydew Restaurant on Station Road, running since 1962, is the easy choice near the railway station: a vegetarian thali alongside North Indian, Chinese and Continental plates.
Ambrosia, the rooftop restaurant of the Ambassador Hotel on Kutchery Road, is the dressed-up dinner (₹₹₹), with a North Indian menu in both veg and non-veg.
In the Dargah quarter the kitchens are Mughlai and meat-first. At Hotel Jannat by the Nizam Gate a vegetarian can order kadai paneer, dal and tandoori rotis. Madina Hotel opposite the station is built on meat, and a vegetarian eats better a few streets away.
On the Jaipur road, Bagh Baan Family Restaurant at Gagwana, about 13 km out of town, is a garden restaurant with a large vegetarian menu: a stop on the drive rather than a walk from the Dargah.
Jain and no-onion food
Ajmer has a strong Jain presence: Rajasthan Tourism describes the city as significantly known for the Jain religion, with the Soniji ki Nasiyan temple and its hall of gold-plated figures, and the Nareli Jain Temple, a pilgrimage point for Digambara Jains, on the Jaipur highway. For food, ask for Jain preparations at Desi Chulha Rabri Wala, and note that the kadhi at Khandelwal Chat Bhandar is made without onion or garlic. Elsewhere, ask before you order.
